Today I am making Easter dinner for my mother, brother, sister, and her friend, so the menu for dinner will be a bit larger than normal, though I only ate small portions of the total menu listed for dinner. My mother brought ham, and kubasa; and my sister made crescent rolls. I didn’t have any ham or kubasa, but I did have a cresent roll. I made, roasted veggies, steamed asparagus, spaghetti squash, salad, and a couple baguettes (more details below). I also provided the desert.

Snacks for today:
- Mozzerella Cheese Stick
- ~80 pistachios
Supper for today:
- 1/2 a chicken breast
- Roasted veggies (acorn squash, butternut squash, another squash I don’t know the name of, red onion, white onion, fresh mushrooms, asparagus, 10 cloves garlic [thinly sliced], sesame seeds, pan-toasted pine nuts, grated parm. cheese, extra virgin olive oil [to coat veggies], salt, and fresh cracked pepper)
- Spaghetti squash topped with a little heart smart margarine, salt and fresh cracked pepper
- Steamed asparagus topped with heart smart margarine, and sprinkled with sesame seeds
- Salad (romain lettuce, red bell pepper, yellow bell pepper, radishes, seeded roma tomatoes, shaved red onion, seeded cucumber, grape tomatoes, salt, cracked pepper, blue cheese crumbles, sesame seeds, pan-toasted pine nuts, extra virgin olive oil, and balsamic vinegar)
- 1 crescent roll (with extra virgin olive oil and balsamic vinegar in a dipping dish as desired)
- “No Sugar Added” Vanilla Fudge Brownie ice cream
I also made two baguettes that the others at the Easter meal ate – I didn’t have any.
Today was the first time I have made spaghetti squash, and I can guarantee it won’t be the last. It was dead easy to prepare.

I continued my running today. My walk/run intervals for today were:
0/30, 5/0
I was clock-counting the last 12 minutes which made the run harder at the end. I ran the last 30 seconds at a much faster than normal pace. I felt pretty good for the whole run. My knee started to really hurt during the 5 minute cool-down walk.
I didn’t do the Pilates ab workout today either. I think I will target Tuesday as the next time I do it.

I did the Pilates ab workout today, and I think the fact I haven’t tried to do them for almost 5 days as really helped. I managed to get almost through the first two exercise sets before starting to struggle. I am taking that as a sign of progress. I might just only do the ab workouts every 2-3 days for now to allow my abs more time to rest/rebuild, and when they are strong enough I can move to doing them daily.
I also did my walk/run intervals today. The intervals I did today were:

Woo!! 30 minutes of non-stop running! I am very, very confident of being able to do the 5k run at the Manitoba Marathon now. I will register for the marathon in the next month or so. If I can keep improving like I have been as far as duration is concerned, I might register for the 12k run at the Canada Day Road Race 2005 – Winnipeg instead of the 5k. But we will see how I feel closer to June (after June 1 the entry fees go up).
My knee is a little tender after the run, but not as bad as it has been, so here’s to hoping it is getting better.

Today was the first time since I have on the South Beach Diet that I have gone out for breakfast with my mom. I took her to Perkins, and to be honest, it wasn’t nearly as big a deal as I thought it might be. I had steak and eggs for breakfast, and instead of hashbrowns and toast I had them substitute steamed veggies, and they did that with no problems at all. The only slightly noticable deviation I had was that I had coffee for the first time since being on the diet, but even that was not a huge deal, as I have never been a huge coffee drinker.
My mom also decided to skip hashbrows and got some sliced tomatoes instead. It was all-in-all a good breakfast. My sister was too tired to get up and join us, so it was just me and my mother. After breakfast we picked up my sister and went to see National Treasure. I think I will definitely be getting that movie when it comes out on DVD.
After the movie my mom and sister came back to my house to help me straighten it out a little for Easter dinner on Sunday.
I then drove them home, taking with us the last (I hope) of the old grocery items I can no longer eat.

No workout today as the Wellness Institute is closed. I am skipping the ab workout again today, and will do both tomorrow. It is actually good the Wellness Institute is closed, as I think my knee could use a day of rest.

I had my mom over for dinner tonight. I made roasted veggies with shrimp added to them, and I made the pistachio encrusted chicken I ate with my sister last night again. My mom said they were both really good, so I guess that bodes well for this Sunday when I make most of the dishes for our Easter dinner.
I am going to work up the courage to buy and cook an eggplant today. I will buy a small one just in case I don’t like it.

Well, to say that this morning’s workout was a watershed would be a severe understatement. I am moving to a whole new level in my running. After yesterday’s 10 minute run to finish my intervals, I decided to start today with 10 minutes and see how I felt from there. So, here are today’s walk/run intervals:
0/25, 5/0
Yep… I ran (well, jogged) a full 25 minutes non-stop! The last 5 minutes were a bit difficult, but I did it. I think the biggest mental hurdle was getting past 12:30 of running. Once I was past the halfway point it became a bit easier from a psychological point of view.
I also brought my mp3 player with my for the first time and listened to music to help distract me from time counting too much.
My knee is pretty sore now. It is actually a bit tender to the touch. I hope I am not damaging it be continuing to run when it is sore. I might take a day off running as a reward for the 25 minutes, and give my knee a day to rest. I will see how it feels tomorrow.
